Cocoyam Fufu

Fu fu flour is milled from cocoyam (the root of the elephant ear plant) and cassava, and is a staple food in traditional African cuisine (the starchy root vegetable from which tapioca is derived). Cassava flour, made by combining the flour with boiling water, is a popular Caribbean vegetable that is served with a dressing of butter, black pepper, and fresh lemon or orange juice.
